Ingredients

  • 1 cup roasted New Mexico green chile, peeled, chopped, and drained
    (Hatch preferred, hot or mild—your call)

  • 1 cup shredded cheese
    (Cheddar, Monterey Jack, or a Cheddar-Jack blend)

  • 4 large eggs

  • 1 cup milk

  • ½ cup Bisquick

  • ½ tsp salt

  • ¼ tsp black pepper

  • ¼ tsp garlic powder (optional, but nice)

  • Butter or spray for greasing the dish

Optional Add-Ins (very New Mexico-approved)

  • ½ cup cooked crumbled bacon or chorizo

  • ¼ cup finely chopped onion

  • Extra cheese on top because… obviously


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or quiche pan.

  2. Layer the good stuff: Spread green chile evenly in the dish. Sprinkle cheese (and any add-ins) over the top.

  3. Mix: In a bowl, whisk eggs, milk, Bisquick, salt, pepper, and garlic powder until smooth.

  4. Pour the egg mixture over the chile and cheese.

  5. Bake uncovered for 35–45 minutes, until puffed, golden, and a knife in the center comes out clean.

  6. Rest 5–10 minutes before slicing (it sets up and cuts cleaner).
