Blender Cake (Vanilla or Lemon)

Ingredients

  • 4 large eggs

  • 1 cup milk

  • 1 cup vegetable oil

  • 2 cups granulated sugar

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • 1 tsp vanilla extract
    (or lemon zest + 2 tbsp lemon juice for lemon cake)


Instructions

  1. Blend

    • Add eggs, milk, oil, sugar, and vanilla to the blender.

    • Blend until completely smooth (about 30–40 seconds).

  2. Add dry ingredients

    • Add flour and baking powder.

    • Pulse just until combined—don’t overblend.

  3. Bake

    • Pour batter into a greased 9×13 pan or Bundt pan.

    • Bake at 350°F (175°C):

      • 9×13: 35–40 minutes

      • Bundt: 40–45 minutes

    • Toothpick should come out clean.

  4. Cool & serve

    • Let cool slightly.

    • Serve plain or dress it up.

    Blend 1 cup powdered sugar + 2–3 tbsp milk + vanilla

  • Cinnamon sugar: sprinkle before baking

  • Chocolate drizzle or powdered sugar dusting

Variations

  • Chocolate blender cake: add ½ cup cocoa powder + ¼ cup extra milk

  • Orange blender cake: swap milk for orange juice + add zest
