Fluffy Homemade Dinner Rolls

Makes 12 soft rolls

Ingredients

  • 3½ cups (440 g) all-purpose flour

  • 2¼ tsp instant yeast (1 packet)

  • ¼ cup (50 g) sugar

  • ¾ cup (180 ml) warm milk

  • 1 egg (room temperature)

  • ¼ cup (60 g) butter, melted

  • 1 tsp salt


Instructions

1. Activate Yeast

  • Mix warm milk, sugar, and yeast

  • Let sit 5 minutes until foamy


2. Make the Dough

  • Add egg, melted butter, and salt

  • Gradually mix in flour

  • Knead until soft and elastic

    • 8–10 min by hand

    • 5–6 min mixer

Dough should be slightly tacky, not sticky.


3. First Rise

  • Place dough in greased bowl, cover

  • Rise 1–1½ hours until doubled


4. Shape Rolls

  • Punch down dough

  • Divide into 12 equal pieces

  • Roll into smooth balls

  • Place in greased baking dish, slightly touching


5. Second Rise

  • Cover and rise 30–45 minutes until puffy


6. Bake

  • Bake at 180°C / 350°F for 18–22 minutes

  • Tops should be lightly golden


7. Finish

  • Brush hot rolls with melted butter

  • Try not to eat all of them immediately 😅


Pro Tips for Extra Fluff

  • Milk instead of water = softer crumb

  • Let rolls touch in the pan for pull-apart softness

  • Brush butter twice (before & after baking) for max richness

  • Garlic butter rolls: Add garlic + parsley to melted butter
