Tender Beef with Rice & Sweet Peppers
Ingredients
Beef

1½ lb beef chuck, sirloin, or stew beef (cut into bite-size pieces)

1 tsp salt

½ tsp black pepper
-
1 tsp paprika
-
1 tsp garlic powder
-
2 tbsp oil
Sauce & Veg
-
1 large onion, sliced
-
3–4 sweet bell peppers (red, yellow, orange), sliced
-
3 cloves garlic, minced
-
1 tbsp tomato paste
-
1 cup beef broth
-
1 tbsp soy sauce or Worcestershire sauce
-
1 tsp dried thyme or Italian seasoning
Rice
-
1½ cups long-grain rice
-
3 cups water or broth
-
1 tbsp butter
-
Salt to taste
Instructions
1. Make the rice
Cook rice with water/broth, butter, and salt. Fluff and set aside.
2. Brown the beef

Season beef with salt, pepper, paprika, and garlic powder.

Heat oil in a deep skillet or pot.

Brown beef in batches until nicely colored. Remove and set aside.
3. Build the flavor

In the same pan, sauté onions 3–4 minutes.

Add sweet peppers and cook until softened.

Stir in garlic and tomato paste; cook 1 minute.
4. Make it tender

Return beef to the pan.

Add beef broth, soy/Worcestershire, and thyme.

Bring to a simmer, cover, and cook on low heat for 45–60 minutes, until beef is tender.
(Add a splash of broth if needed.)
5. Serve
Spoon tender beef and sweet peppers over warm rice. Drizzle extra sauce on top 🤎
