Creamy Italian Chicken

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)

  • Salt & black pepper

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • 2 tbsp olive oil

  • 2 tbsp butter

  • 4 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup chicken broth

  • ½ cup freshly grated Parmesan cheese

  • ½ tsp red pepper flakes (optional)

  • 1 tsp dried basil or oregano

  • Optional add-ins: sun-dried tomatoes, spinach, mushrooms


Instructions

1. Season & sear the chicken

  • Season chicken with salt, pepper, garlic powder, and Italian seasoning.

  • Heat olive oil in a large skillet over medium-high heat.

  • Sear chicken 5–6 minutes per side until golden.

  • Remove chicken and set aside.


2. Make the creamy sauce

  • In the same pan, melt butter.

  • Add garlic and sauté 30 seconds until fragrant.

  • Pour in chicken broth and scrape up browned bits.

  • Add cream, Parmesan, basil/oregano, and red pepper flakes.

  • Simmer gently 3–5 minutes until slightly thickened.


3. Finish the dish

  • Return chicken to the pan.

  • Simmer uncovered 8–10 minutes until chicken is cooked through and sauce thickens.

  • Add spinach or sun-dried tomatoes in the last few minutes if using.


Serve with

  • Pasta 🍝

  • Mashed potatoes

  • Rice

  • Garlic bread or roasted veggies

  • Pound chicken evenly for juicy results

  • Use freshly grated Parmesan (melts smoother)

  • If sauce gets too thick, add a splash of broth or pasta water
