🫐 Swamp Butt Berries (Sweet & Tangy Pickled Berries)
🧾 Ingredients
- 2 cups fresh or frozen blueberries (or mixed berries)
- 1/2 cup apple cider vinegar
- 1/4 cup water
- 1/3–1/2 cup honey (adjust to taste)
- 1–2 tbsp sugar (optional, for extra sweetness)
- 1 tsp salt
- 1–2 cloves garlic, minced
- 1 tsp red pepper flakes (adjust for heat)
- 1 tsp mustard seeds
- 1/2 tsp black pepper
- 1–2 tbsp fresh herbs (like chopped basil, mint, or cilantro)
👩🍳 Instructions
- Make the brine
In a saucepan, combine vinegar, water, honey, sugar (if using), salt, garlic, red pepper flakes, mustard seeds, and black pepper.
Bring to a gentle simmer over medium heat. - Add berries
Stir in the blueberries and let them simmer for 3–5 minutes, just until they begin to soften but not burst completely. - Cool & flavor
Remove from heat and stir in fresh herbs. - Jar it up
Pour everything into a clean glass jar. Let it cool to room temperature. - Chill
Refrigerate for at least 12–24 hours before eating (flavor improves over time).

- Spoon over grilled meats (especially pork or chicken)
- Add to cheese boards
- Use as a topping for sandwiches or burgers
- Mix into salads for a sweet-tangy kick
