🥬 Crispy Cabbage & Egg Fritters

3 cups cabbage, finely shredded

3 large eggs

½ cup all-purpose flour

2 tbsp chopped green onions or parsley

½ tsp black pepper

½ tsp paprika (optional)

¼ tsp baking powder (optional, for fluffier fritters)

3–4 tbsp vegetable oil for frying
👩🍳 Instructions
1️⃣ Prepare the cabbage
Place shredded cabbage in a large bowl. If it feels very firm, lightly squeeze it with your hands for about 1 minute to soften.
2️⃣ Mix the batter
Add to the cabbage:

Onion

Garlic

Green onions

Salt, pepper, and paprika

Mix everything well until the cabbage is evenly coated and forms a thick mixture.
3️⃣ Shape the fritters
Take about 2–3 tablespoons of mixture and shape into small oval patties or logs using your hands.
4️⃣ Cook
Heat oil in a frying pan over medium heat.
Place the fritters in the pan and cook 3–4 minutes per side until golden brown and crispy.
5️⃣ Drain & serve
Remove and place on paper towels to absorb excess oil.
