Old-Fashioned Chocolate Fudge

Old-Fashioned Chocolate Fudge (Classic Creamy Candy)

Old-Fashioned Chocolate Fudge is a traditional stovetop candy made with sugar, cocoa, butter, and milk. Unlike quick microwave fudge, this version is cooked and beaten to create a smooth, creamy texture just like classic candy-shop fudge.

⏱ Time

  • Prep: 10 minutes

  • Cook: 15 minutes

  • Cooling: 1–2 hours

Yield: about 25–30 fudge squares

🧾 Ingredients

  • 2 cups granulated sugar

  • ½ cup unsweetened cocoa powder

  • 1 cup whole milk

  • 4 tbsp unsalted butter

  • 1 tsp vanilla extract

  • ¼ tsp salt

Optional Add-ins

  • ½ cup chopped walnuts or pecans

  • ½ cup mini marshmallows

🍳 Instructions

1️⃣ Prepare Pan

  1. Line an 8×8 inch pan with parchment paper or foil.

  2. Lightly butter the paper.

2️⃣ Mix Ingredients

In a medium saucepan combine:

  • sugar

  • cocoa powder

  • milk

  • salt

Stir until smooth.

3️⃣ Cook the Fudge

  1. Place pan over medium heat.

  2. Stir constantly until mixture comes to a boil.

  3. Stop stirring and let it boil until it reaches 234–240°F (soft-ball stage).

(If you don’t have a thermometer: drop a little syrup in cold water; it should form a soft ball.)

4️⃣ Add Butter & Vanilla

Remove from heat and add:

  • butter

  • vanilla

Do not stir yet. Let it cool to about 110°F (warm but not hot).

5️⃣ Beat the Fudge

  1. Beat the mixture with a wooden spoon or mixer.

  2. Continue beating 5–8 minutes until it thickens and loses its shine.

This step gives the fudge its creamy texture.

6️⃣ Set the Fudge

  1. Quickly spread into prepared pan.

  2. Smooth the top.

  3. Add nuts if desired.

7️⃣ Cool & Cut

  1. Let fudge set 1–2 hours at room temperature.

  2. Cut into small squares.
