This Cherry Loaf Cake is a soft, buttery quick bread filled with sweet cherries and topped with a simple vanilla glaze. It’s perfect for dessert, brunch, or with coffee.


Ingredients

Cherry Loaf

  • 2 cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • ¾ cup granulated sugar

  • ½ cup unsalted butter, softened

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup milk or buttermilk

Glaze

  • 1 cup powdered sugar

Instructions

1. Prepare the oven and pan

  • Preheat oven to 350°F (175°C).

  • Grease and lightly flour a 9×5 inch loaf pan.


2. Mix the dry ingredients

In a bowl whisk together:

  • Flour

  • Baking powder

  • Baking soda

  • Salt

Set aside.


3. Cream butter and sugar

In a large bowl:

  1. Beat butter and sugar until light and fluffy (about 2–3 minutes).

  2. Add eggs one at a time, mixing well after each.

  3. Stir in vanilla extract.


4. Combine batter

  1. Add the dry ingredients to the butter mixture alternating with milk.

  2. Mix just until combined.


5. Add cherries

  1. Toss chopped cherries with 1 tablespoon flour (prevents sinking).

  2. Fold gently into the batter.


6. Bake

  1. Pour batter into the loaf pan.

  2. Bake 50–60 minutes or until a toothpick inserted in the center comes out clean.

Let cool in the pan 10 minutes, then remove and cool completely.


Make the Glaze

  1. In a small bowl mix:

    • powdered sugar

    • milk

    • vanilla

  2. Add a little cherry juice for color if desired.

  3. Stir until smooth.


Finish

  1. Drizzle glaze over the cooled loaf.

  2. Let it set 10–15 minutes before slicing.


Servings: 8–10 slices
Total time: ~1 hour 15 minutes
