🫐 Blueberry Cream Cheese Loaf
🧾 Ingredients
Cream Cheese Layer

4 oz (115 g) cream cheese, softened

¼ cup sugar

1 egg
-
½ tsp vanilla extract
Blueberry Loaf Batter

1½ cups all-purpose flour
-
¾ cup sugar
-
1½ tsp baking powder
-
¼ tsp salt
-
½ cup milk (or buttermilk for extra softness)

⅓ cup vegetable oil or melted butter
-
1 egg
-
1 tsp vanilla extract
-
1 cup fresh or frozen blueberries
-
1 tbsp flour (to coat blueberries)

Preheat oven to 350°F (175°C). Grease or line a loaf pan.

Make cream cheese layer:
Beat cream cheese, sugar, egg, and vanilla until smooth. Set aside. -
Prepare loaf batter:
In a bowl, whisk flour, sugar, baking powder, and salt.
Add milk, oil/butter, egg, and vanilla. Mix just until combined. -
Blueberries:
Toss blueberries with 1 tbsp flour (prevents sinking). -
Assemble:

Pour ½ of loaf batter into pan

Spoon cream cheese mixture evenly over it

Add remaining batter

Sprinkle blueberries on top and gently press in

Bake for 50–60 minutes, until a toothpick comes out clean.

Cool in pan 15 minutes, then transfer to a rack.
