Blueberry Cream Cheese Loaf

Ohhh this one’s a keeper 😍 Soft, moist, lightly sweet, and loaded with blueberries.

🫐 Blueberry Cream Cheese Loaf

🧾 Ingredients

Cream Cheese Layer

  • 4 oz (115 g) cream cheese, softened

  • ¼ cup sugar

  • 1 egg

  • ½ tsp vanilla extract

Blueberry Loaf Batter

  • 1½ cups all-purpose flour

  • ¾ cup sugar

  • 1½ tsp baking powder

  • ¼ tsp salt

  • ½ cup milk (or buttermilk for extra softness)

  • ⅓ cup vegetable oil or melted butter

  • 1 egg

  • 1 tsp vanilla extract

  • 1 cup fresh or frozen blueberries

  • 1 tbsp flour (to coat blueberries)

👩‍🍳 Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan.

  2. Make cream cheese layer:
    Beat cream cheese, sugar, egg, and vanilla until smooth. Set aside.

  3. Prepare loaf batter:
    In a bowl, whisk flour, sugar, baking powder, and salt.
    Add milk, oil/butter, egg, and vanilla. Mix just until combined.

  4. Blueberries:
    Toss blueberries with 1 tbsp flour (prevents sinking).

  5. Assemble:

    • Pour ½ of loaf batter into pan

    • Spoon cream cheese mixture evenly over it

    • Add remaining batter

    • Sprinkle blueberries on top and gently press in

  6. Bake for 50–60 minutes, until a toothpick comes out clean.

  7. Cool in pan 15 minutes, then transfer to a rack.

  • Lemon glaze (powdered sugar + lemon juice) 🍋

  • Crumb topping (butter, flour, sugar)

  • Dust with powdered sugar
