🍎🥧 Apple Pie Enchiladas

A warm, cinnamon-apple filling wrapped in tortillas and baked in a buttery caramel sauce — tastes like apple pie meets cobbler!

Ingredients

For the Filling

  • 2 (21 oz) cans apple pie filling

  • 1 tsp ground cinnamon (optional, for extra spice)

For the Enchiladas

  • 8 medium flour tortillas

For the Sauce

  • 1/2 cup (1 stick) unsalted butter

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar

  • 1/2 cup water

  • 1/2 tsp cinnamon

  • 1/2 tsp vanilla extract

Instructions

1️⃣ Preheat

Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

2️⃣ Prepare the Filling

  1. Chop apple pie filling into smaller pieces (optional for easier rolling).

  2. Stir in cinnamon if using.

3️⃣ Roll the Enchiladas

  1. Spoon about 1/3–1/2 cup apple filling down the center of each tortilla.

  2. Roll up tightly and place seam-side down in the baking dish.

4️⃣ Make the Sauce

  1. In a saucepan over medium heat, melt butter.

  2. Stir in granulated sugar, brown sugar, water, and cinnamon.

  3. Bring to a boil, then reduce heat and simmer 3 minutes.

  4. Remove from heat and stir in vanilla.

5️⃣ Bake

  1. Pour sauce evenly over the rolled tortillas.

  2. Let sit 5 minutes so tortillas absorb some sauce.

  3. Bake for 30–35 minutes, until golden and bubbling.
