🥬 Slow Cooker Cabbage Roll Soup

🛒 Ingredients:

  • 1 lb (450g) ground beef

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 small head green cabbage, chopped

  • 2–3 carrots, sliced

  • 2 cans (14–15 oz each) diced tomatoes

  • 1 can (15 oz) tomato sauce

  • 4 cups beef broth

  • ½ cup uncooked rice (white or brown)

  • 1 teaspoon paprika

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • 1 tablespoon Worcestershire sauce

  • Salt and black pepper to taste


👩‍🍳 Instructions:

  1. Brown the beef
    In a skillet over medium heat, cook ground beef with onion until browned. Drain excess fat. Add garlic and cook 30 seconds more.

  2. Add to slow cooker
    Transfer beef mixture to the slow cooker.

  3. Add remaining ingredients
    Stir in cabbage, carrots, diced tomatoes, tomato sauce, beef broth, rice, and seasonings.

  4. Cook

    • LOW for 6–8 hours

    • OR HIGH for 3–4 hours
      Until cabbage and rice are tender.

  5. Adjust seasoning
    Taste and add more salt/pepper if needed.


🔥 Tips:

  • For a low-carb version, replace rice with cauliflower rice (add in last 30 minutes).

  • Add a splash of lemon juice at the end to brighten flavor.
