🥩🧄 Garlic Butter Beef Bites & Potatoes
Juicy, seared beef bites tossed in rich garlic butter with crispy golden potatoes — all made in one pan. Perfect for weeknights and ready in about 30 minutes.
🛒 Ingredients (Serves 4)
For the Potatoes

1½ lbs baby Yukon gold or red potatoes, halved

2 tbsp olive oil

½ tsp paprika

½ tsp dried thyme
For the Beef
-
1½ lbs sirloin steak (or ribeye), cut into 1-inch cubes

1 tsp salt
-
½ tsp black pepper
-
½ tsp garlic powder
-
1 tbsp olive oil
Garlic Butter Sauce

4 tbsp unsalted butter
-
5 cloves garlic, minced
-
1 tbsp fresh parsley, chopped

½ tsp crushed red pepper flakes (optional)
👩🍳 Instructions
1️⃣ Cook the Potatoes

Heat 2 tbsp olive oil in a large skillet over medium heat.

Add potatoes cut-side down. Season with salt, pepper, paprika, and thyme.

Cook 10–15 minutes, stirring occasionally, until golden brown and fork tender.

Remove from skillet and set aside.
2️⃣ Sear the Beef

Pat beef dry (this helps get a good sear).

Season with salt, pepper, and garlic powder.

Heat 1 tbsp olive oil in the same skillet over medium-high heat.

Add beef in a single layer (cook in batches if needed).

Sear 2–3 minutes per side until browned but still tender.

Remove from heat.
3️⃣ Make Garlic Butter

Lower heat to medium.

Melt butter in skillet.

Add minced garlic and cook 30 seconds until fragrant (don’t burn it).

Stir in parsley and red pepper flakes.
4️⃣ Combine

Return potatoes and beef to the skillet.

Toss everything in the garlic butter.

Cook together 1–2 minutes to blend flavors.
