Ingredients (Makes 8–10)

  • 2 cups (250g) all-purpose flour

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • 1 tsp salt

  • 1 tbsp sugar (optional)

  • ½ cup (115g) cold unsalted butter, cubed

  • ¾–1 cup cold buttermilk

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment.

  2. In a bowl, whisk flour, baking powder, baking soda, salt, and sugar.

  3. Cut in cold butter using a pastry cutter or fingers until mixture looks like coarse crumbs.

  4. Pour in buttermilk gradually, stirring just until dough comes together. Don’t overmix.

  5. Turn dough onto floured surface. Gently pat to 1-inch thickness.

  6. Fold dough over itself 3–4 times (creates flaky layers).

  7. Cut with biscuit cutter. Place on baking sheet (touching for softer sides).

  8. Bake 12–15 minutes until golden brown.

  9. Brush tops with melted butter (optional).


🍨 Homemade Vanilla Ice Cream (No Machine Option Included)

Ingredients

  • 2 cups heavy cream

  • 1 cup whole milk

  • ¾ cup sugar

  • 1 tbsp vanilla extract

  • Pinch of salt

Ice Cream Maker Method

  1. Whisk all ingredients until sugar dissolves.

  2. Chill mixture 2–4 hours.

  3. Churn in ice cream maker according to manufacturer instructions.

  4. Freeze 2–4 hours until firm.

No-Churn Method

  1. Whip 2 cups heavy cream to stiff peaks.

  2. Fold in 1 can (14 oz) sweetened condensed milk + vanilla.

Ingredients

Chicken Marinade

  • 2 lbs chicken pieces

  • 2 cups buttermilk

  • 1 tsp garlic powder

Coating

  • 2 cups flour

  • 1 tbsp cornstarch

  • 1 tsp paprika

  • 1 tsp salt

  • 1 tsp pepper

Oil for frying

Instructions

  1. Marinate chicken in buttermilk + seasonings for at least 4 hours (overnight best).

  2. Mix flour, cornstarch, and spices in bowl.

  3. Remove chicken from marinade, dredge in flour mixture, press firmly.

  4. Let coated chicken rest 10 minutes.

  5. Heat oil to 350°F (175°C).

  6. Fry 12–15 minutes (internal temp 165°F / 74°C).

  7. Drain on rack, not paper towels (keeps crispy).


🧇 Classic Buttermilk Waffles

Ingredients (Makes 6–8 waffles)

  • 2 cups flour

  • 2 tbsp sugar

  • 1 tbsp baking powder

  • ½ tsp salt

  • 2 eggs

  • 1¾ cups buttermilk

  • ½ cup melted butter

  • 1 tsp vanilla

Instructions

  1. Preheat waffle iron.

  2. Mix dry ingredients in bowl.

  3. In another bowl, whisk eggs, buttermilk, butter, vanilla.

  4. Combine wet + dry until just mixed (small lumps OK).

  5. Pour into waffle iron; cook until golden and crisp.
