Instructions

  1. Make the meatballs
    In a bowl, mix ground beef, egg, salt, and pepper.
    Roll into small meatballs (1–1½ inches).

  2. Brown the meatballs
    Heat tallow in a pot or skillet over medium heat.
    Brown meatballs on all sides (don’t fully cook through yet). Remove and set aside.

  3. Build the soup
    In the same pot:

    • Add bone broth and butter

    • Bring to a gentle simmer

  4. Cook meatballs in broth
    Return meatballs to the pot.
    Simmer 10–15 minutes until cooked through and tender.

  5. Creamy option
    Lower heat and stir in heavy cream (don’t boil).
