🧀 Crispy Zucchini Garlic Bites

Makes about 12–14 bites

Ingredients

  • 2 medium zucchini, grated

  • ½ tsp salt (for draining)

  • 1 cup shredded mozzarella

  • ¼ cup grated parmesan

  • 1 egg

  • ½ cup breadcrumbs (panko for extra crisp)

  • 2 cloves garlic, minced

  • 2 tbsp chopped fresh parsley

  • ¼ tsp black pepper

  • ½ tsp Italian seasoning


Instructions

1️⃣ Prep the Zucchini (Very Important)

  • Grate zucchini and sprinkle with salt.

  • Let sit 10 minutes.

  • Squeeze out as much liquid as possible using a clean towel.
    (This keeps them crispy, not soggy.)

2️⃣ Mix

In a bowl combine:

  • Drained zucchini

  • Mozzarella

  • Parmesan

  • Egg

  • Breadcrumbs

  • Garlic

  • Parsley & seasonings

Mix until it holds together.

3️⃣ Shape

Roll into golf-ball sized bites and place on lined baking sheet.

4️⃣ Bake

  • Brush or spray lightly with oil.

  • Bake at 400°F (200°C) for 18–22 minutes.

  • Broil last 2–3 minutes for extra golden tops.


🥣 Creamy Garlic Herb Dip

Mix together:

  • ½ cup Greek yogurt or sour cream

  • 1 tbsp mayo (optional)

  • 1 tbsp lemon juice

  • 1 tbsp chopped parsley

  • ½ tsp garlic powder

  • Salt & pepper to taste

Chill 15 minutes before serving.


🔥 Extra Crispy Option

Pan-sear in a little olive oil 2–3 minutes per side instead of baking.
