Beef Stew,Chicken Soup,Clam Chowder & Chili

🥩 Beef Stew

Ingredients

  • 2 lbs beef chuck, cubed

  • 2 tbsp flour

  • Salt & pepper

  • 2 tbsp oil

  • 1 onion, chopped

  • 3 carrots, sliced

  • 3 potatoes, cubed

  • 2 celery stalks, chopped

  • 3 cups beef broth

  • 1 cup water

  • 1 tbsp tomato paste

  • 1 tsp dried thyme

  • 1 bay leaf

Instructions

  1. Toss beef with flour, salt, and pepper.

  2. Brown beef in oil in a large pot; remove.

  3. Sauté onion and celery.

  4. Add beef back with broth, water, tomato paste, thyme, and bay leaf.

  5. Simmer covered 1–1½ hours.

  6. Add carrots and potatoes; cook 30–40 more minutes until tender.


🍗 Chicken Soup

Ingredients

  • 1 lb chicken breast or thighs

  • 8 cups chicken broth

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 1 small onion, diced

  • 1 cup egg noodles (optional)

  • Salt, pepper, parsley

Instructions

  1. Bring broth to a boil. Add chicken and simmer 20 minutes.

  2. Remove chicken, shred, and return to pot.

  3. Add vegetables; cook 10–15 minutes.

  4. Add noodles and cook until tender.

  5. Season and garnish with parsley.


🥣 Clam Chowder (Creamy)

Ingredients

  • 4 slices bacon, chopped

  • 1 onion, diced

  • 2 cups potatoes, cubed

  • 1 cup clam juice

  • 2 (6.5 oz) cans chopped clams, drained

  • 1½ cups milk or half-and-half

  • 2 tbsp flour

  • Salt & pepper

Instructions

  1. Cook bacon; remove and set aside.

  2. Sauté onion in bacon fat.

  3. Add potatoes and clam juice; simmer until tender.

  4. Stir flour into milk, then add to pot.

  5. Add clams and bacon; heat gently (do not boil).

  6. Season and serve.


🌶 Chili

Ingredients

  • 1 lb ground beef

  • 1 onion, chopped

  • 1 can (15 oz) kidney beans, drained

  • 1 can (15 oz) diced tomatoes

  • 1 can (8 oz) tomato sauce

  • 1–2 tbsp chili powder

  • 1 tsp cumin

  • Salt & pepper

  • Shredded cheese (optional topping)

Instructions

  1. Brown beef and onion; drain excess fat.

  2. Stir in beans, tomatoes, sauce, and spices.

  3. Simmer 30–45 minutes (longer = better flavor).

  4. Top with cheese and serve.
