🍔 Classic Cheeseburger

Ingredients (4 burgers)

  • 1½ lbs ground beef (80/20)

  • Salt & pepper

  • 4 slices cheddar cheese

  • 4 sesame burger buns

  • Lettuce, tomato, onion, pickles

  • Ketchup & mustard

Instructions

  1. Form beef into 4 patties. Season both sides with salt & pepper.

  2. Cook on grill or skillet (medium-high) 3–4 minutes per side.

  3. Add cheese during last minute; cover to melt.

  4. Toast buns lightly.

  5. Assemble with toppings and serve hot.

Ingredients

  • 6 egg yolks

  • ¾ cup sugar

  • 1 cup mascarpone cheese

  • 1½ cups heavy cream

  • 2 cups strong espresso (cooled)

  • 2 tbsp coffee liqueur (optional)

  • 24 ladyfingers

  • Cocoa powder

Instructions

  1. Whisk yolks & sugar over simmering water until thick; cool slightly.

  2. Beat in mascarpone.

  3. Whip cream to stiff peaks; fold in.

  4. Dip ladyfingers quickly in espresso.

  5. Layer cookies + cream mixture. Repeat.

  6. Dust with cocoa.

  7. Chill at least 4 hours (overnight best).


🌀 Soft Cinnamon Buns

Dough

  • 3½ cups flour

  • 2¼ tsp yeast

  • 1 cup warm milk

  • ⅓ cup sugar

  • 1 egg

  • ⅓ cup melted butter

  • ½ tsp salt

Filling

  • ½ cup softened butter

  • ¾ cup brown sugar

  • 1½ tbsp cinnamon

Icing

  • 1 cup powdered sugar

  • 2–3 tbsp milk

  • ½ tsp vanilla

Instructions

  1. Mix dough ingredients; knead 5–7 minutes.

  2. Rise 1 hour.

  3. Roll out, spread butter, sprinkle sugar & cinnamon.

  4. Roll up, slice, place in pan.

  5. Rise 30 minutes.

  6. Bake 350°F (175°C) for 20–25 min.

  7. Drizzle icing on warm rolls.


🧀 Homemade Blue Cheese

(This is a simplified home-style method.)

Ingredients

  • 1 gallon whole milk

  • ¼ tsp mesophilic starter culture

  • ¼ tsp Penicillium roqueforti

  • ½ tsp liquid rennet

  • 2 tsp salt

Basic Process

  1. Warm milk to 86°F (30°C). Add cultures.

  2. Add diluted rennet; let set 60–90 minutes.

  3. Cut curds; drain.

  4. Mold and lightly press.

  5. Salt and age 2–3 months, piercing to allow blue veining.


Now… if I had to eliminate one?
Blue cheese might be the most controversial 😏
