  • 2 sprigs fresh rosemary or thyme (optional)

🍄 Mushrooms

  • 8 oz cremini or white mushrooms, sliced

  • 1 tbsp butter

  • 1 tbsp olive oil

  • 1 garlic clove, minced

  • Salt & pepper

  • Optional: splash of white wine or balsamic vinegar

🥔 Baked Potatoes

  • 2 large russet potatoes

  • Olive oil

  • Salt

  • Butter, sour cream, shredded cheese, chives (for serving)

🫛 Green Beans

  • 12 oz fresh green beans, trimmed

  • 1 tbsp butter or olive oil

  • 1 garlic clove, minced

  • Salt & pepper

  • Optional: squeeze of lemon

👩‍🍳 Instructions

1️⃣ Bake the Potatoes (Start First)

  1. Preheat oven to 400°F (200°C).

  2. Scrub and dry potatoes. Pierce several times with a fork.

  3. Rub with olive oil and salt.

  4. Place directly on oven rack or baking sheet.

  5. Bake 45–60 minutes until fork tender.

2️⃣ Prepare the Steak

  1. Remove steak from fridge 30–45 minutes before cooking.

  2. Pat dry and season generously with salt and pepper.

  3. Heat a cast iron skillet over high heat until very hot.

  4. Add olive oil, then place steak in pan.

  5. Sear 3–4 minutes per side for medium-rare (adjust for thickness).

  6. During last 2 minutes, add butter, garlic, and herbs.
Tilt pan and spoon melted butter over steak repeatedly.

  7. Rest steak 10 minutes before slicing.

3️⃣ Sauté the Mushrooms

  1. Heat butter and olive oil in skillet over medium-high.

  2. Add mushrooms in a single layer.

  3. Let them brown without stirring for 2–3 minutes.

  4. Stir, add garlic, salt, and pepper.

  5. Cook until golden and tender (5–7 minutes total).

  6. Optional: deglaze with a splash of wine or balsamic.

4️⃣ Cook the Green Beans

Option A – Blanch & Sauté (Best texture)

  1. Boil beans in salted water 3–4 minutes.

  2. Transfer to ice water.

  3. Sauté in butter with garlic 2–3 minutes.

Option B – Simple Sauté

  1. Sauté beans in butter 5–7 minutes until tender-crisp.

  2. Season and add lemon if desired.

🍽️ To Serve

  • Split baked potatoes and fluff inside with a fork.

  • Add butter, sour cream, cheese, chives.

  • Slice steak against the grain.

  • Plate with mushrooms and green beans.

  • Spoon extra garlic butter over steak.
