2 ribeye or strip steaks (1–1½ inches thick)

Instructions

Bring to room temp: Let steaks sit out 30–45 minutes. Pat dry.

½ cup heavy cream

½ cup beef broth

1 tsp Dijon mustard
Instructions

Press crushed peppercorns into both sides of steaks. Salt lightly.

Sear in hot skillet with oil, 3–4 minutes per side.

Remove steaks; keep warm.

Add brandy (careful—it may flame). Reduce slightly.

Add broth and cream; simmer 3–5 minutes until thickened.

Stir in mustard.

Steak & Marinade:

Cook steak in hot skillet or grill 4–5 minutes per side.

Ingredients (Serves 4)

1½ lbs ribeye, thinly sliced (partially frozen helps slicing)

1 onion, thinly sliced

1 green bell pepper (optional)

8 slices provolone or American cheese

4 hoagie rolls

2 tbsp oil

Salt & pepper
Instructions

Heat oil in large skillet.

Cook onions (and peppers if using) until soft; remove.

Cook steak quickly over high heat (2–3 minutes).

Return veggies; season.

Divide meat into 4 portions in pan.
