🥩 Classic Steak (Pan-Seared or Grilled)

Ingredients (Serves 2)

  • 2 ribeye or strip steaks (1–1½ inches thick)

  • Salt (generous)

  • Fresh cracked black pepper

Instructions

    • Rare: 120–125°F (49–52°C)

  • 2 filet mignon or strip steaks

  • ½ cup heavy cream

  • ½ cup beef broth

  • 1 tsp Dijon mustard

Instructions

  1. Press crushed peppercorns into both sides of steaks. Salt lightly.

  3. Remove steaks; keep warm.

  4. Add brandy (careful—it may flame). Reduce slightly.

Ingredients (Serves 4)

Steak & Marinade:

  • 1½ lbs flank or skirt steak

  • 3 tbsp olive oil

  • Juice of 2 limes

  • 2 cloves garlic, minced

  • 1 tsp cumin

  • 1 tsp chili powder

  • ½ tsp paprika

  • Salt & pepper

Veggies:

  • 1 onion, sliced

  • 2 bell peppers, sliced

  • 1 tbsp oil

To Serve:

  • Warm tortillas

  • Sour cream, guacamole, salsa (optional)

Instructions

  1. Marinate steak at least 1 hour (up to 8 hours).

  2. Cook steak in hot skillet or grill 4–5 minutes per side.

  3. Rest 5–10 minutes, slice thin against grain.

  4. Sauté onions & peppers until tender.

  5. Serve in warm tortillas with toppings.


🥖 Philly Cheesesteak

Ingredients (Serves 4)

  • 1½ lbs ribeye, thinly sliced (partially frozen helps slicing)

  • 1 onion, thinly sliced

  • 1 green bell pepper (optional)

  • 8 slices provolone or American cheese

  • 4 hoagie rolls

  • 2 tbsp oil

  • Salt & pepper

Instructions

  1. Heat oil in large skillet.

  2. Cook onions (and peppers if using) until soft; remove.

  3. Cook steak quickly over high heat (2–3 minutes).

  4. Return veggies; season.

  5. Divide meat into 4 portions in pan.

  6. Place cheese on top; cover briefly to melt.

  7. Scoop into toasted hoagie rolls.

  8. Serve hot.
