🛒 Ingredients

  • 1½ – 2 lbs flank steak, skirt steak, or sirloin

  • 1½ tsp salt

  • 1 tsp black pepper

  • 1 tsp smoked paprika

  • ½ tsp red pepper flakes (optional)

  • 1 tbsp soy sauce (adds depth)

  • 1 tbsp olive oil

Garlic Herb Butter

  • 4 tbsp unsalted butter

  • 4 cloves garlic, minced

  • 1 tbsp fresh parsley, finely chopped

  • 1 tsp fresh thyme (or ½ tsp dried)

  • ½ tsp crushed red pepper flakes

  • 1 tsp lemon juice (optional but brightens flavor)


🔥 Instructions

1️⃣ Prep the Steak

  • Pat steak dry with paper towels.

  • Rub with salt, pepper, paprika, red pepper flakes, and soy sauce.

  • Let sit at room temperature 20–30 minutes.


2️⃣ Sear

  • Heat a heavy skillet (cast iron preferred) over high heat until very hot.

  • Add olive oil.

  • Sear steak 3–4 minutes per side (for medium-rare).

    • Internal temp:

      • 130–135°F = medium-rare

      • 140°F = medium

  • Remove and rest 5–10 minutes.


3️⃣ Make Garlic Herb Butter

  • Reduce heat to medium.

  • In same skillet, melt butter.

  • Add garlic and cook 30–45 seconds (don’t burn).

  • Stir in parsley, thyme, red pepper flakes, and lemon juice.


4️⃣ Slice & Coat

  • Slice steak against the grain into strips.

  • Return slices to skillet and toss in garlic butter for 30–60 seconds.

  • Spoon extra butter over top.

  • For extra crust, pat steak very dry before cooking.

  • Want a slight char? Finish under broiler 1–2 minutes.
