Garlic Butter Mashed Potatoes with Steak & Fresh Vegetables

🥩 Ingredients

For the Garlic Butter Mashed Potatoes:

  • 3 pounds russet or Yukon Gold potatoes, peeled and cubed

  • 4 tablespoons butter

  • 4 cloves garlic, minced

  • ½–¾ cup warm milk or heavy cream

  • Salt and black pepper, to taste

For the Steak:

  • 2 ribeye or filet mignon steaks (1–1½ inches thick)

  • Salt and freshly ground black pepper

For the Vegetables:

  • 1 bunch asparagus, trimmed

👩‍🍳 Instructions

1️⃣ Make the Garlic Butter Mashed Potatoes

  1. Place potatoes in a large pot and cover with cold salted water.

  2. Bring to a boil and cook 15–20 minutes, until fork-tender.

  3. While potatoes cook, melt butter in a small pan over medium heat. Add minced garlic and sauté 1–2 minutes until fragrant (don’t brown).

3️⃣ Roast or Sauté the Vegetables

Roast method:

  • Toss vegetables with olive oil, salt, and pepper.

  • Roast at 400°F (200°C) for 15–20 minutes.

OR sauté method:

  • Cook in a skillet over medium-high heat for 8–10 minutes until tender-crisp.


🍽️ To Serve

  • Spoon mashed potatoes onto the plate.

  • Place steak on top or alongside.

  • Add vegetables on the side.

  • Finish with a dollop of herb butter on the steak for extra richness.
