🍌 Old-Fashioned Banana Nut Cookies
Ingredients

½ cup (1 stick) unsalted butter, softened

½ cup granulated sugar

½ cup packed brown sugar

1 large egg

1 teaspoon vanilla extract

1 cup mashed ripe banana (about 2–3 very ripe bananas)

2 cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

½ teaspoon ground cinnamon (optional)

1 cup chopped walnuts or pecans
Instructions

Preheat oven to 350°F (175°C).
Line baking sheets with parchment paper. -
Cream butter & sugars
Beat butter, granulated sugar, and brown sugar until light and fluffy. -
Add wet ingredients
Mix in egg and vanilla. Stir in mashed bananas. -
Combine dry ingredients
In a separate bowl, whisk flour, baking soda, salt, and cinnamon. -
Mix together
Gradually add dry ingredients to wet mixture. Stir just until combined.
Fold in chopped nuts. -
Scoop dough
Drop by rounded tablespoons onto baking sheet (they spread slightly). -
Bake
Bake 10–12 minutes until edges are lightly golden. -
Cool
Let cool 5 minutes on pan, then transfer to a rack.
Texture Tip
These are soft and slightly cakey.
If you want them:

Chewier → reduce banana to ¾ cup and add ½ cup oats

Sweeter bakery-style → add ½ cup white chocolate chips
