Ingredients

1 lb ground beef

1 small onion, diced

3 cups peeled & diced potatoes

1 cup sliced carrots

2 cups chicken or beef broth

1½ cups milk

1 cup shredded cheddar cheese

3 tbsp butter

3 tbsp flour

½ tsp garlic powder

½ tsp dried thyme (optional)

Salt & black pepper to taste
Optional add-ins:

½ cup corn

½ cup peas
-
¼ cup sour cream (extra creaminess)
Instructions
1️⃣ Brown the Beef
In a large pot over medium heat:

Cook ground beef and onion until browned.

Drain excess grease if needed.
2️⃣ Add Vegetables

Stir in potatoes, carrots, and broth.

Bring to a boil.

Reduce heat and simmer 15–20 minutes until potatoes are tender.
3️⃣ Make It Creamy
In a small saucepan:

Melt butter.

Whisk in flour and cook 1–2 minutes.

Slowly whisk in milk until smooth and slightly thickened.
Pour into soup and stir.
4️⃣ Finish

Add cheese, garlic powder, thyme, salt, and pepper.
