🥩 Slow Cooker Beef & Potatoes (Tender Chuck Roast)
Ingredients

3–4 lb chuck roast, cut into large chunks

4–5 Yukon gold or russet potatoes, cut into chunks

1 small onion, chopped

3 cloves garlic, minced

1 cup beef broth
-
1 packet (1 oz) brown gravy mix

1 packet (1 oz) onion soup mix
-
1 tbsp Worcestershire sauce
-
1 tbsp soy sauce
-
1 tsp black pepper
-
1 tsp paprika
-
½ tsp dried thyme (optional)

2 tbsp cornstarch + 2 tbsp water (for thickening, optional)
Instructions
1️⃣ Sear the Beef (Highly Recommended)

Heat 1–2 tbsp oil in a skillet.

Season beef lightly with salt & pepper.

Sear on all sides until browned (about 2–3 minutes per side).

This adds deep flavor.
2️⃣ Load the Slow Cooker

Add potatoes and onion to the bottom.

Place seared beef on top.

In a bowl, mix broth, gravy mix, onion soup mix, Worcestershire, soy sauce, pepper, paprika, and thyme.

Pour over everything.
3️⃣ Cook

Low: 8 hours
-
High: 4–5 hours
Cook until beef is fork-tender and easily shreddable.
4️⃣ Thicken (Optional but Recommended)

Mix cornstarch and water.

Stir into slow cooker during last 20–30 minutes.

Let sauce thicken.
